Halibut Venturess
(yield 4-6 servings)
2 lbs Halibut cut into serving size pieces
1/2 c butter
1/2 c sour cream
juice of 1/2 lemon (fresh)
onion
grated cheddar cheese
salt and pepper
Preheat oven to 350 deg. Place fish in casserole dish, lightly salt and pepper. Melt butter sour cream and lemon juice and cover the fish with sauce. Cut onion into rings and place over fish, cover entire dish with grated cheddar cheese. Bake @ 350 degrees for thirty to thirty five minutes.

Deep fried Salmon, Ling Cod, or Halibut
(yield 4-6 servings)
1-2 Lbs Fish
8 eggs
6 cups panko
4 cups flour
tbsp garlic powder
2tbsp pepper
Deep fryer or electric skillet w/peanut or vegetable oil @ 350-370deg. Cut fish into desired chunks. Pat dry with paper towel. Place flour, pepper, and garlic powder in large tupperware, place fish in tupperware, close lid and shake till fish is coated uniformly. Remove fish, place on large sheet of tin foil. Discard flour, put 2 cups panko in same tupperware. Crack eggs into medium sized bowl and blend. Dip fish in egg and let excess egg drip off then place on top of panko. Sprinkle one cup panko atop fish and put lid on then shake to cover fish with panko, repeat with remaining fish. Deep fry fish until golden brown in peanut or vegetable oil @ 350 degrees.

Blackened Seafood Pasta
1-2 lbs rockfish or salmon
1 pkg pasta of choice
1 jar alfredo sauce
1 head of fresh broccoli or bag ready to steam
1 stick butter
1tsp minced garlic
1tsp red pepper flakes
Cabelas open season blackening seasoning
On large piece of tin foil lay out fish and pat dry. Liberally cover fish with blackening seasoning. Cut broccoli into florets and steam to desired texture. In large pot, place alfredo sauce, butter, garlic, red pepper flakes, garlic and keep on low heat. In separate pot cook noodles until done and drain, place drained noodles and broccoli into sauce mix and stir lightly until mixed. In a large cast iron or equivalent pan place a small coating of olive oil and heat on medium high heat. Place fish in pan 1-2 minutes per side or until done, then put fish in pot with sauce mixture. Fold in fish and serve.
